General Description
Histamine is a biogenic amine synthesized from L-histidine exclusively by L-histidine decarboxylase. Histamine is an amine that is produced as part of a local immune response to cause inflammation. The accumulation of histamine is commonly found in non-fresh foods, where free and protein-rich histidine readily undergoes microbial decarboxylation. Consumption of HA-rich foods can cause the development of allergy-like food poisoning, characterized by diarrhea, hypertension, headaches, nausea, vomiting, itching, a burning sensation and red rashes.
