Introduction
Alternariol Monomethyl Ether (AME) is a secondary metabolite produced by Alternaria species and belongs to the dibenzopyrone class of mycotoxins. It is structurally related to alternariol (AOH) and commonly co-occurs with it in contaminated grains, fruits, and vegetable-derived products. AME exerts biological activity by inducing oxidative stress, generating DNA strand breaks, and modulating key cellular signaling pathways, leading to cytotoxic and genotoxic effects in mammalian cells. Due to its defined chemical structure, frequent occurrence in food chains, and moderate toxicity, AME serves as a critical reference standard for studying Alternaria toxin biosynthesis, metabolism, and food-safety risk assessment.
