Lipoxygenases are non-heme iron enzymes that dioxygenate polyunsaturated fatty acids such as linoleic and arachidonic acid to form hydroperoxides. Their products are precursors of signaling molecules including jasmonates in plants and leukotrienes in animals, and influence flavor and oxidation in foods.
