General Description
Zearalenone (ZEN) is a potent estrogenic metabolite produced by some Fusarium and Gibberella species. Zearalenone has been detected frequently in different cereals, such as wheat, barley, maize, rice, flour, malt, beer, and corn oil. When cows consume foods contaminated with zearalenone, it can be detected in their milk, thereby reaching the human food chain. Zearalenone is the primary toxin that binds to estrogen receptors, causing infertility, abortion or other breeding problems, especially in swine. Zearalenone exposure can cause other serious health problems to humans and animals, including immunotoxic, hepatotoxic, and xenogenic effects. (Ropejko, K., et al., 2021; Zinedine, A., et al., 2007)
