Introduction
Staphylococcus aureus Enterotoxin Type H (SEH) belongs to the Group III enterotoxins (alongside SEA and SED) and exhibits potent emetic activity, causing acute gastroenteritis upon ingestion of contaminated foods (≥0.5 ng/g). SEH functions by binding directly to MHC class II molecules and specific T-cell receptor Vβ regions, triggering massive cytokine release (e.g., TNF-α, IL-6) that can lead to toxic shock syndrome or food poisoning. Notably, SEH is highly heat-stable and resistant to proteases, allowing persistence in dairy and ready-to-eat foods. It is epidemiologically significant in outbreaks.
