Introduction
Staphylococcus aureus Enterotoxin Type E (SEE) is a heat-stable exotoxin (molecular weight: ~28.4 kDa) produced by Staphylococcus aureus and classified among the "classical" enterotoxins (SEA-SEE). As a superantigen, SEE bypasses conventional antigen processing by binding directly to MHC class II molecules and specific T-cell receptor regions, triggering massive cytokine release (e.g., TNF-α, IL-6) that can lead to toxic shock syndrome or food poisoning. SEE is highly resistant to heat (surviving 100°C for 30 minutes) and digestive proteases (e.g., pepsin), allowing it to persist in contaminated foods. Methods include multiplex PCR for gene identification (entE) and ultra-sensitive ELISA/LC-MS/MS.
