L-ascorbic acid (also known as Vitamin C) is a water soluble organic compound involved in many biological processes. The only way human uptake ascorbic acid is via food, but the daily needs of vitamin C for a human are not clear yet. In the food industry Vitamin C is used a vitamin as well as an antioxidant and preservative.

Acute vitamin C deficiency leads to scurvy. Since vitamin C is partially converted in food into the biologically-active L-dehydroascorbic acid, both substances must be determined in a test system. Many analytical techniques including sensors and biosensors have been suggested for a detection of ascorbic acid in very varied types of samples.
