Vitamin B1 (thiamine), one of the water-soluble vitamins, is a necessary coenzyme for a variety of life supporting conditions to maintain good health involved in cellular carbohydrate metabolism, as well as in sound mental health. Deficiency of thiamin leads to wholesale degeneration of the body, particularly the nervous and circulatory systems, and eventually death.
There are many natural ways to add thiamine-rich foods to an everyday diet. Food sources of thiamine include beef, liver, dried milk, nuts, oats, oranges, pork, eggs, seeds, legumes, peas and yeast. Foods are also fortified with thiamine. Some foods that are often fortified with Vitamin B1 are rice, pasta, breads, cereals and flour.
